Pumpkin Gems

1 yellow cake mix
1/2 tsp baking soda
2 tsp cinnamon
2 tsp cloves
3 eggs
15 or 20 oz can pumpkin
1/2 C oil

Mix separately wet ingredients and dry ingredients. Combine. Put in greased muffin tins or paper muffin liners. Bake 20-25 minutes at 350 degrees F. When cooled, top with cream cheese frosting.

Fruit Juice Wassel

12 oz frozen pineapple juice concentrate
12 oz froz orange juice conc.
12 oz froz apple juice conc.
6 oz froz lemonade conc.
11 C water (2 cans for each can of concentrate)
12 whole cloves
4 cinnamon sticks

combine everything, heat & simmer for 10 minutes, or until desired spiceness.

Low fat Whole Wheat Pancakes

combine:
4 C whole wheat flour
2 T baking powd
1 tsp salt

combine in a separate bowl:
3 C milk
3 T oil
1 egg
2 egg whites

mix wet and dry ingredients well. bake on lightly greased griddle. makes about 24 3.5" pancakes

pancakes ala Bob:
to dry ingredients add a teaspoon or so of ground cinnamon and between 1/3 and 2/3 cup sugar
to wet ingredients add a teaspoon or so of vanilla
once the batter is mixed, fold in blueberries and walnut gems.
mmmmm, boy!

Egg Rolls with Sweet 'n Sour Sauce

Egg Rolls
½ lb lean ground beef, pork, or sausage
1 clove garlic, minced
1 c finely chopped cabbage (it is better with more than 1 c)
½ c shredded carrot
¼ c chopped onion
2 T soy sauce
½ t sugar
¼ t salt
10 egg roll wrappers
vegetable oil

Fry ground beef and garlic over medium high heat until meat is no longer pink. Add vegetables and cook mixture until tender. Season to taste with soy sauce, sugar and salt. Cool. Lay egg wrapper on flat surface at a diagonal. Place a large spoonful of filling just below the center. Fold top corner over filling, tucking under on the opposite side. Fold side corners over filling, forming an envelope shape. Brush edges of wrapper lightly with water, then finish rollng to seal. Repeat with remaining wrappers and filling.

Heat at least 2 inches of vegetable oil in a heavy saucepan, wok or deep-fat fryer to 375 F. Fry egg rolls, a few at a time, until golden brown. Drain on paper towels.

Sweet and Sour Sauce
½ c sugar
½ c chicken broth or water
1/3 c white vinegar
1 t vegetable oil
1 t soy sauce
¼ t salt
1 clove crushed garlic
2 T cornstarch
2 T water

Combine sugar, broth, vinegar, oil, soy sauce, salt and garlic in small sauce pan. Bring to a gentle boil over medium heat. Thicken with mixture of cornstarch and water, stirring constantly. Serve hot.

Whole Wheat Flat Bread

2 C WW flour
1 tsp salt
oil
water

Mix flour and salt. In a 1-cup measure, put in 1/3 C oil and fill the rest of the cup with water up to 7/8 C. Pour oil and water into flour and salt. Mix into a stiff dough. Roll out into thin circles. Bake on ungreased skillet.

Oatmeal Muffins

1 C flour, wheat or white
1 C quick oats
1/2 C brown or white sugar
1 Tbsp baking powder
1 tsp salt
1 C milk
1/3 C vegetable oil
1 egg, slightly beaten

Mix flour, oats, sugar, baking powder and salt. Add milk, oil, and egg, stirring just to moisten. Fill greased muffin cups almost full. Bake until golden brown. Serve piping hot from the oven.
You can also bake this in a bread pan, but it takes closer to 25'ish minutes to bake.

Bake 400 degrees 14-16 minutes Yield 12 muffins

Clam Chowder

1 can clams
2 Tbsp butter
1/4 C onions, chopped
1/4 C celery, chopped
1/4 C carrots, finely chopped
3/4 C potatoes, diced

White sauce:
2 Tbsp butter
3 Tbsp flour
2 C milk
1/2 tsp salt
Dash of pepper

Drain clams, but retain clam juice. Cook onions, celery, and carrots in butter for a few minutes. Add potatoes & clam juice.
White sauce: melt butter and blend in flour. Add milk, stirring until boiling point is reached. Reduce heat and cook for 3 minutes more. Add salt and pepper. Add clams. Combine the 2 mixtures and serve.
